Why do I keep choosing chaotic workplaces?

The calm job felt like nothing happening. Not restful. Flat, slightly wrong, like a room with the sound turned off, and within four months you were looking again at places you already knew were a mess.
This is Attraction to Harm, read in a building rather than in a person. The pull is the same pull, the recognition is the same recognition, and the fact that it is aimed at an employer changes nothing about how it works.
Why do steady jobs feel like nothing?
Because steady produces no signal, and you have a system calibrated to read signal. Where nothing is arriving, the system reports an absence, and absence gets experienced as boredom, wrongness, or a suspicion that you are wasting your life.
That is not a preference for excitement. It is a measuring instrument built for one range, reporting nothing when the reading falls outside it. A manager who is consistent gives it nothing to do. A manager whose mood decides the temperature of the week gives it a full-time job.
The word people reach for is chemistry, or fit, or energy. What they are describing is recognition. The unstable place felt like somewhere you already knew how to be, and knowing how to be somewhere is a very strong sensation that has nothing to do with whether it is good for you.
The pull is not assessment. It is recognition, and recognition is not a recommendation.
What am I actually recognising in these places?
Usually a specific arrangement rather than a general disorder. Somebody's state governing the room. Praise that arrives unpredictably rather than in proportion. A standard that moves, so that being enough is never a settled question and always a live one.
That last one is the engine and it is worth stating plainly, because it explains the loyalty. Unpredictable approval is far more compelling than steady approval. A place that tells you regularly and calmly that you are doing fine hands you nothing to chase. A place that withholds it and then gives it suddenly produces an attachment that nobody can talk you out of.
The phrasings people arrive with name the shape before they have a word for the mechanism:

What does the pull feel like in the body?
A lift. A charge in the chest, a sharpening, a sense of being switched on that the steady place never produced. It arrives during the interview, often at the exact moment somebody says something that should have been a warning.
That timing is the finding, and it is worth reconstructing honestly. Most people can name the sentence. We are all a bit intense here. The last person could not handle the pace. You will need to be available. The charge went up on the sentence, not despite it.

The lift is the first domino. It arrives three to seven seconds before the reasoning does.
Then the reasoning: this one is different, I am older now, the pace is what I have been missing, I would rather be somewhere that cares.
The reasoning is not an assessment of the job. It is the lift, converted into a sentence with a career in it.
The flat reading you get from the steady place is the same instrument reporting the other end of the range. Neither reading is information about the quality of the job. Both are information about what you are calibrated to detect.
Why do I defend a workplace I would tell a friend to leave?
Because the assessment you make for somebody else runs on evidence, and the one you make for yourself runs on the lift. Those are two different systems and they reach different answers with complete confidence.
There is also a sunk position to protect. Naming the place as bad requires naming the choice as yours, and the mind will do a great deal of work to avoid that, including finding whatever is genuinely good here and putting it in front.
In the room where this was installed, unpredictability was the ordinary condition and reading it accurately was survival. That skill is real and it is valuable, and it is also why calm registers as absence rather than as safety.
None of that is a verdict about your judgment. It is a description of an instrument, and an instrument can be read differently once you know what it measures.
How do I choose differently next time?
Not by resolving to pick better. You have resolved that, at the end of the last one, with total sincerity. Insight does not rewire. Repetition does.
The window is three to seven seconds wide and it opens earlier here than almost anywhere else in the archive: at the lift, in the interview, before any decision is on the table. That is the single most catchable version of this pattern anywhere.
